[Photographer's caption:] The Fort serves nineteenth century's finest gourmet meat featuring Buffalo steaks, Buffalo tongue, Roast buffalo marrow bones, Rocky Mountain oysters, Armadillo eggs, charbroiled quail, Elk medallions, Colorado Ostrich, Pintate game hen, and wild Artic Musk Ox. Sam Arnold, Bushwah and his wife Carrie preside over the courtyard. The Mountain Man's Toast is: Here's to the childs what's come afore. The Atlas of the New West digital collection consists of photographic materials relating to Goin's contribution of 20 photographs and their accompanying captions to the 1997 book project Atlas of the New West, edited by William Riebsame, and collaborated upon with Patricia Nelson Limerick and Charles Wilkinson, among others. The project highlighted development and change in the West, as well as outdoor recreation and cultural opportunities in the region. These materials are from Series 2, Subseries 1, Sub-subseries 1 of the Peter Goin Papers (2015-33).
